Viking Lamb coming to Millbank
We have recently purchased a flock of Soay Sheep and plan to produce Viking Lamb. Soay sheep produce a very lean carcase of high-quality, fine flavoured meat, perfect for those who like wild meat. Even the older animals, if slow cooked, are very tender and retain the excellent flavour.
Soay are unique in that it is Britain’s only wild sheep species. Soay originally came from St Kilda archipelago 110 miles west of Scotland's main land. A primitive sheep breed, it is said to be suspended in time thanks to the breeds isolation.
This is a unique British sheep breed that is nervous and flighty, very like our fallow deer. It cannot be herded and scatters if you try to do so. Unlike domesticated sheep, it sheds it's fleece, proving it's ancient and wild origins. All I can say is "I am pleased we have 6 ft high deer fences to keep them in".
